From a freshness standpoint (maximum nutrient value) Raw Living Spirulina contains 30 billion living cells per 16 ounce jar and is 100% fresh, whole and alive the moment of harvest. These cells (imagine tiny water balloons) do not contain a cellulose cell structure like most vegetables do so over time they begin break down like any raw vegetable.
As long as these cells stay whole and intact, most of the vital nutrients are preserved. Each day that passes, a few cells collapse releasing the phycocyanin (blue gold), which you will see collecting in the bottom of the jar.
When this blue phycocyanin (70% pure protein) is exposed to air (opening the jar), a fermentation process begins converting the macronutrients into a probiotic. This is the similar to how kimchi, yoghurt, sauerkraut, etc. is made. This is a safe and natural process.
There is no exact date that the Raw Living Spirulina will instantly turn from nutrient value to probiotic. It is a gradual daily progression which is explained on our Microbiological Lab Tests below. This is also healthy, however it is probably not necessarily the reason why you purchased the product. For this it is best consume within 12 days of the date of harvest to receive maximum nutrient benefits.
