Fresh Raw Living Spirulina is safe in the refrigerator for up to 61 days.
There are stages it goes through.
1. Day 1-3 Fresh Harvest is green. (cells are whole) chlorophyll visible in the cell wall.
2. Day 4-12 Color turns darker green to blue (cell walls become thinner); chlorophyll and phycocyanin are visible
3. Day 13-16 Color is Dark Blue (cell walls very thin). Phycocyanin mostly visible through the cell membrane
4. Day 16 – 21 (cells are breaking) blue liquid Phycocyanin visible in the jar (consume quickly)
From this point on, oxidation begins as the raw nutrients ferment, converting into a probiotic.
USDA/FDA Microbiological testing shows safe at 61 days in refrigerator unopened.
Note: The time dates above are based on an average year. During the summer, the cell walls are thicker and stronger with more Omega Fatty Acids as the cells produce higher amounts to protect themselves from the sun, increasing the time.
In the winter, the cell walls are thinner, shortening the time.
